Saffron is expensive for several reasons,

such as its labour-intensive harvesting process- Saffron is grown in a limited Country. All Saffron of that particular area starts harvesting all in one so that skilled harvesting manpower gets short.

3) Low productivity – Iran is the largest producer of saffron in the world and accounts for over 90% of global saffron production. According to the Food and Agriculture Organization of the United Nations (FAO) for the year 2020, the productivity of saffron per hectare in Iran is around 4.2 kg per hectare. Other countries that produce smaller quantities of saffron include India- A sound latest producer accounts for 7 % & productivity is about 3.5 per kg per Hectare, different Spain, Greece, Afghanistan, and Morocco. Still, their average productivity per hectare is not readily available.

3) Why Low productivity – Around 1000 to 1500 Kg Bulbs we get 1 kg dry saffron stigma, which means 150000 flowers we need to produce 1 kg dry saffron stigma
